The Carnival Fried Pastries are one of the most loved desserts by both adults and children. They are crunchy and flaky, typical of the carnival period.
They are known by different names depending on the region—frappe, bugie, cenci—these thin, golden sheets are fried and sprinkled with plenty of powdered sugar.
Making them at home is easy and fun, and it’s a great opportunity to spend some quality time with our children.
The recipe I propose is my mom’s! It’s really easy, economical, and guaranteed to succeed!

Ingredients
- 4 cups all-purpose flour
- 4 eggs
- 1/2 cup sugar
- 1/3 cup butter
- 1 packet baking powder
- as needed peanut oil
- as needed powdered sugar
- 1 packet vanillin
- 1 pinch salt

Steps
In a bowl, sift the flour with the baking powder, vanillin and a pinch of salt.
In another bowl, beat the eggs with the sugar and the butter (melted but not hot). Pour the mixture obtained into the flour bowl and knead first with a fork and then with your hands to mix all the ingredients.
Transfer the dough onto a kneading board and continue working it with your hands until it becomes smooth.
Wrap it in plastic wrap and let it rest at room temperature for 30 minutes.
After this time, divide the dough into small pieces. Pass them through a pasta roller, starting with the widest setting and gradually reducing the thickness until you obtain a thin sheet (usually the penultimate or last notch of the machine).
Once you have a thin sheet, use a pastry wheel to cut the pastries into any shape you like.
In a deep pan, heat the peanut oil, which must be hot but not smoking.
Fry our pastries a few at a time, until they become golden and crunchy. Place them on kitchen paper to remove the excess oil, then place them on a tray.
