Ingredients

  • 1 eggplant
  • 2 eggs
  • 2.8 oz provola (grated)
  • 2 tbsp extra virgin olive oil
  • to taste salt
  • 1 clove garlic

Tools

Steps

  • Wash and cut the eggplant into cubes.

    Pour the extra virgin olive oil into a skillet and add a whole clove of garlic.

    Let it infuse for a few seconds, then add the eggplants, salt, and cook over medium heat for about 10-12 minutes, stirring often, until they are soft and slightly golden.

    When the eggplants are cooked, move them slightly and create two small spaces in the middle of the skillet.

    In each space, crack an egg and cover with a lid.

  • Cook for 4-5 minutes, until the egg white is white but the yolk is still soft.

    At this point, add the grated provola over the eggs and the eggplants.

    Cover again and let the cheese melt for a few minutes until it is completely stringy.
