Ingredients
- 4 chicken drumsticks
- 1 zucchini
- 2 carrots
- 2 potatoes
- 1/4 onion
- to taste water
- 1 broth cube (vegetable)
- 2 tablespoons extra virgin olive oil
- 1 tablespoon tomato paste

Steps
Wash the zucchini, remove its ends, and cut it into cubes.
Peel the potatoes and the carrots, wash them, and cut them into cubes.
In a large pot, heat the extra virgin olive oil. Add the finely sliced onion, the chicken drumsticks, and brown for a few minutes.
Add the chopped vegetables, the tomato paste, the broth cube, and mix. Let it flavor for a few minutes on medium/low heat, then cover with water.
Cover with a lid and bring to a boil. Lower the heat and cook for about 30/40 minutes until the vegetables and chicken are well cooked.
Turn off the heat and place the chicken drumsticks on a cutting board. Let them cool slightly, then debone using a fork and knife.
Put the meat in the broth with the vegetables and stir.
Our chicken and vegetable soup is ready to be served alone or accompanied by croutons or slices of toasted bread.
