Chicken and Vegetable Soup

Ingredients

  • 4 chicken drumsticks
  • 1 zucchini
  • 2 carrots
  • 2 potatoes
  • 1/4 onion
  • to taste water
  • 1 broth cube (vegetable)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon tomato paste

Steps

  • Wash the zucchini, remove its ends, and cut it into cubes.

    Peel the potatoes and the carrots, wash them, and cut them into cubes.

    In a large pot, heat the extra virgin olive oil. Add the finely sliced onion, the chicken drumsticks, and brown for a few minutes.

    Add the chopped vegetables, the tomato paste, the broth cube, and mix. Let it flavor for a few minutes on medium/low heat, then cover with water.

  • Cover with a lid and bring to a boil. Lower the heat and cook for about 30/40 minutes until the vegetables and chicken are well cooked.

  • Turn off the heat and place the chicken drumsticks on a cutting board. Let them cool slightly, then debone using a fork and knife.

    Put the meat in the broth with the vegetables and stir.

  • Our chicken and vegetable soup is ready to be served alone or accompanied by croutons or slices of toasted bread.
