Chicken broth is one of the classic comfort foods of Italian cuisine, perfect during damp days but also for preparing soups or tasty risottos.
This recipe is really simple to prepare, but the result will be a healthy and flavorful dish.
You can enrich it with vegetables of your choice and replace the drumsticks with other parts of the chicken. I like to add a handful of pasta and prepare a rich and tasty soup.
You can freeze the broth filtered in ice bags so you can use it when needed.

Ingredients
- 4 chicken drumsticks
- 2 carrots
- 2 quarts water
- 1 onion
- 1 stalk celery
- 2 zucchinis
- 2 tsps tomato paste
- to taste extra virgin olive oil
- to taste salt

Steps
Start by preparing the vegetables. Peel the carrots and the onion and cut them into coarse pieces along with the celery and the zucchinis.
In a large pot, heat a swirl of extra virgin olive oil and sauté the vegetables for a few minutes. Add the chicken drumsticks and tomato paste, stir, and continue sautéing.
Cover the meat and vegetables with water and bring to a boil. Lower the heat and cook for about 40 minutes. Once ready, taste and adjust with salt.
Let it cool, then strain it using a fine mesh sieve or cheesecloth to separate the meat and vegetables from the liquid.
Our chicken broth is ready to be used. The meat and vegetables can be consumed as a second course or blended with a hand blender to make a meat and vegetable puree!

Store in the fridge in an airtight container. Consume within 2 days.
