Ingredients

  • 3 eggs
  • 1 1/3 cups flour
  • 1/2 cup potato starch
  • 3 tablespoons grated coconut (shredded)
  • 1/2 cup powdered sugar with vanilla
  • 1/4 cup butter (soft)
  • 1 teaspoon baking powder
  • 1/3 cup unsweetened cocoa powder
  • as needed dried coconut (in flakes for decoration)
  • 1/4 cup dark chocolate chips

Steps

  • Preheat the oven to 356°F and prepare a muffin pan with paper liners.

  • In a bowl, sift together the flour, potato starch, baking powder, and unsweetened cocoa powder. Add the grated coconut and dark chocolate chips and mix well.

  • In another bowl, beat the eggs with the powdered sugar with vanilla until you obtain a light and frothy mixture. I recommend using electric whisks for this operation.

  • Add the soft butter until a homogeneous consistency is obtained.

  • Gradually add the sifted dry ingredients to the mixture and mix gently until forming a smooth batter.

  • Fill the paper liners with the batter up to about 2/3 of the height.

  • Bake in the preheated oven and cook for about 25/30 minutes or until a toothpick inserted in the center comes out clean.

  • Once cooked, let the muffins cool in their pan.

    Before serving, decorate our delicious treats with dried coconut flakes.
