Ingredients
- 3 eggs
- 1 1/3 cups flour
- 1/2 cup potato starch
- 3 tablespoons grated coconut (shredded)
- 1/2 cup powdered sugar with vanilla
- 1/4 cup butter (soft)
- 1 teaspoon baking powder
- 1/3 cup unsweetened cocoa powder

Steps
Preheat the oven to 356°F and prepare a muffin pan with paper liners.
In a bowl, sift together the flour, potato starch, baking powder, and unsweetened cocoa powder. Add the grated coconut and dark chocolate chips and mix well.
In another bowl, beat the eggs with the powdered sugar with vanilla until you obtain a light and frothy mixture. I recommend using electric whisks for this operation.
Add the soft butter until a homogeneous consistency is obtained.
Gradually add the sifted dry ingredients to the mixture and mix gently until forming a smooth batter.
Fill the paper liners with the batter up to about 2/3 of the height.
