Coffee Cheesecake. A fresh and creamy dessert suitable for an elegant after-dinner or a refined snack.
Personally, I love no-bake cakes and the coffee version is one of my favorites. This recipe is perfect in any season, especially in summer, when you want to make a delicious dessert but don’t want to turn on the oven.
It’s a great alternative to the No-Bake Yogurt Cake or the Lemon Cheesecake

Ingredients
- 10.5 oz Digestive biscuits
- 10.5 tbsp butter
- 2.2 cups sweetened vegetable cream for whipping
- 10.5 oz ricotta
- 1 tbsp instant coffee
- 0.35 oz gelatin sheets
- 3.5 tbsp milk
- to taste unsweetened cocoa powder

Steps
Place the Digestive biscuits in a mixer and finely chop them.
Put them in a large bowl, add the melted butter and mix until you obtain a sandy mixture.
Line the base of a springform pan with parchment paper. Pour the biscuit mixture into it and compact the base using the back of a spoon or the bottom of a glass.
Place the pan in the freezer to rest.
Before performing this step, I recommend using a non-stick spray for pans!
In the meantime, soak the gelatin sheets in cold water.
Whip the vegetable cream with the instant coffee, then add the ricotta. Continue mixing for 10 seconds.
Squeeze the gelatin and dissolve it in a small cup of hot milk. Pour the mixture into the cream and mix to combine the ingredients.
Take out the pan containing the biscuit base and pour the cream over it.
Level the base with a spatula or a spoon, cover with plastic wrap, and place in the fridge to rest for at least 4 hours.
Our coffee cheesecake is ready. Unmold and decorate the surface with plenty of unsweetened cocoa powder and, if available, some chocolate-covered coffee beans.
