Ingredients

  • 12.3 oz corn and rice pasta
  • 14 oz spinach (fresh)
  • 7 oz fresh cream cheese
  • to taste salt
  • to taste extra virgin olive oil

Steps

  • Boil the spinach for a few minutes in a little salted water, just long enough to soften them. Drain them well, squeezing gently to remove excess water.

    Blend the spinach with a drizzle of extra virgin olive oil until you get a smooth cream, then transfer them to a pan.

    Turn on the stove, keeping the flame low, and add the fresh cream cheese. Stir until it melts completely and mixes with the cream.

  • Cook the corn and rice penne in plenty of salted water following the cooking times indicated on the package.

    Drain the pasta al dente and pour it directly into the pan with the spinach cream. Mix well to flavor it, adding a little cooking water if necessary.
