The CUPCAKES WITH CARROTS AND ALMONDS are a delicious and healthy dessert that combines the sweetness of carrots with the crunchiness of almonds, all in a soft and fragrant batter.
Making them at home is a breeze, but the result will amaze you.
In fact, thanks to the presence of almonds, carrots, and freshly squeezed orange juice, you will prepare a snack that is healthy but particularly tasty and will be enjoyed by both adults and children.
Serve them with fruit juice or just coffee.
To prepare these cupcakes I used the Bimby, but a simple food processor is enough to achieve the same result.

Ingredients
- 7 oz carrots
- 1 1/2 cups flour
- 4 oz almonds
- 3 1/2 tbsp butter
- 3 eggs
- 1/2 cup sugar
- 1 orange (squeezed)
- 1 packet baking powder
Tools
- Cupcake liners
- Food processor
- Muffin pans
- Citrus juicer
Steps
Preheat the oven to 350°F.
Chop the almonds and set them aside.
Peel the carrots, remove the top part, cut them into pieces, place them in the bowl, and chop for 30 seconds at speed 7.
Gather at the bottom with a spatula, add the eggs, chopped almonds, softened butter, orange juice, sugar, and mix for 1 minute at speed 5.
Add the sifted flour and baking powder and mix for 1 minute at speed 5.
Pour into a silicone mold with hemisphere shapes or into cupcake liners for muffins and bake for about 20 minutes.
Our cupcakes with carrots and almonds are ready.

If you want to prepare the carrot and almond cupcakes without the Bimby, you just need to chop the carrots and almonds with a food processor and then mix the batter with electric beaters following the order of the previous steps.
