Easy and Quick Pasta and Chickpeas

Ingredients
- 10.5 oz mixed pasta
- 14 oz canned chickpeas (2 cans)
- 1/4 white onion
- 1 clove garlic
- 3 tbsps extra virgin olive oil
- 1 tsp tomato paste
- 4.25 cups vegetable broth
- 1 sprig rosemary
- to taste salt
- to taste black pepper
- 1 pinch chili powder (optional)

Steps
In a large pot, heat the extra virgin olive oil. Add the chopped onion, garlic clove and let them flavor for a few minutes.
Add the tomato paste and mix well with a wooden spoon.
At this point, add the drained and rinsed chickpeas and mix gently.
Pour the vegetable broth to cover all the ingredients and bring to a boil. Lower the heat and cook for about 15/20 minutes with the lid on.
Meanwhile, cook the pasta al dente in another pot.
When the chickpeas are tender and the broth has slightly reduced, add the fresh or dried rosemary. Adjust salt and black pepper to taste and, if desired, add a pinch of red chili powder for a spicy touch.
Drain the pasta and add it to the pot with the chickpeas. Mix well and cook for a few minutes so the pasta absorbs the flavor of the sauce.
