Eggs and Asparagus Skillet

Incredibly simple yet very tasty, my recipe for eggs and asparagus skillet combines fresh and creamy flavors in a dish that will make you fall in love at the first bite.

This tasty dish is perfect for a rich and complete meal, ideal in all seasons as you can also prepare it with frozen asparagus.

Serve this dish accompanied by a portion of plain rice and you won’t need to add anything else.

Ingredients

  • 3.5 oz asparagus
  • 2 eggs
  • 1 tbsp butter
  • to taste salt
  • 1/3 cup mozzarella cheese (shredded)

Tools

  • Skillets
  • Lid
  • Knife
  • Cutting board

Steps

  • Rinse the asparagus under running water and remove the woody bottom part by snapping it off, then cut them into pieces about 1/2 inch long.

  • In a non-stick skillet, melt the butter over medium heat. Add the cut asparagus and cook for about 5-7 minutes, or until they become tender yet still crunchy. Add a pinch of salt to taste while cooking.

  • When the asparagus are almost ready, move them slightly towards the edge of the skillet to make space in the center.

  • Crack the eggs into a small bowl and pour them whole into the center of the skillet. Cover with a lid and cook for 3-4 minutes.

  • Add the shredded mozzarella cheese, cover again with the lid and let it melt. It will take about 1 minute.
