Farmer’s style rabbit is a delicious main course to prepare in a pan or with a Wok. Just wash and chop all the vegetables and combine them with the meat, and you’re done. You will get a colorful dish that will satisfy both the eyes and the palate! At our home, it is often prepared between Christmas and New Year’s Eve because it is light, requires few pots, and we can prepare all the ingredients in advance to enjoy the evening at the table with our guests. Ingredients
- 2.2 lbs rabbit (in pieces)
- 1 onion
- 1.75 oz leek
- 3.5 oz red bell pepper
- 3.5 oz yellow bell pepper
- Half potato
- 1.75 oz zucchini
- 6 cherry tomatoes
- black olives
- green olives
- to taste Himalayan salt (pink)
- to taste extra virgin olive oil
- dry white wine

Steps
First, let’s focus on the vegetables.
Wash and cut the peppers in half, remove the seeds, chop into pieces, and set aside.
Peel the potatoes and carrots, dice them.
Chop the zucchini, pit the olives, slice the shallot and onion, wash and quarter the cherry tomatoes.
Take the wok, pour in some extra virgin olive oil, and heat well.
Add the meat and vegetables, season with salt, and mix well.
Brown and deglaze with the dry white wine.
Cover and let cook for about 30 minutes, stirring occasionally.
Add a bit of water if necessary.
