Fig Jam

Ingredients

  • 2.2 lbs figs (ripe)
  • 2 cups sugar
  • 1 lemon (juiced)
  • 1 packet vanillin (optional)

Steps

  • Let’s start by washing and peeling the figs properly.

    Remove the stem and cut them into pieces.

  • Put the cut figs in a large pot and add the sugar and lemon juice. If you want an extra touch of aroma, you can also add a packet of vanillin at this point.

  • Mix everything well and let it rest for about 30 minutes. This will allow the lemon juice to extract the flavor from the figs.

  • After resting, put the pot on the stove over medium-low heat. Bring the mixture to a boil, stirring occasionally to ensure the sugar has completely dissolved.

  • Once it reaches a boil, reduce the heat and let it cook gently for about 45 minutes, or until the jam has thickened.

    Stir occasionally to prevent the jam from sticking to the bottom of the pot.

  • Once it reaches the desired consistency, transfer the hot fig jam into sterilized glass jars and seal them well.

  • After filling and sealing, wrap the jars in a cloth.
    Put them in a pot, cover them with cold water.
    Bring to a boil and let simmer for 20 minutes (250 ml jars) or 30 min (larger ones).
    Turn off and let cool in the water.

  • At this point, check that a vacuum has formed, meaning when pressing the center of the lid, there should be no flexing.

  • Our FIG JAM is ready!

  • How do I know if the jam has thickened during cooking?

    To check the consistency, you can do the “cold saucer test.” Place a small saucer in the freezer for a few minutes, then take a teaspoon of jam and pour it onto the cold saucer. If the jam sets, it’s ready. Otherwise, continue cooking for a few more minutes and repeat the test until it reaches the desired consistency.
