Ingredients
- 6 eggs
- 3.5 oz diced speck
- 2 tablespoons extra virgin olive oil
- 2.8 oz grated Parmesan cheese
- 2 zucchini
- to taste salt
- to taste black pepper
- 0.4 cup milk
- to taste dried parsley (or fresh)

Steps
Chop the white onion into pieces and dice the zucchini
In a large non-stick pan, sauté the onion with two tablespoons of extra virgin olive oil.
Add the zucchini and diced or sliced speck, stir and cook covered for about 5/7 minutes.
Meanwhile, break the eggs into a bowl and add the grated Parmesan, milk, parsley, salt, and pepper. Beat all the ingredients with a whisk until you obtain a homogeneous mixture.
Pour the egg mixture into the pan with the zucchini, distribute the mixture well, and cook over medium-low heat for about 10 minutes.
After this time, flip the frittata and cook for another 4/5 minutes until the base is golden.
To perform this operation, you can use a plate, a flat lid or a frittata pan (like I do!)
