Ice Cream Sandwiches with Chocolate Chips

This recipe immediately brings me back to my childhood, when I loved ice cream sandwiches. Just seeing them in the freezer of the bar downstairs made my eyes light up: two crunchy cookies with a cold, very sweet cream inside, often with chocolate chips on the sides. It was one of the things I most looked forward to during summer.

Today I make them at home, with my own hands. They are healthy, without preservatives, with simple and genuine ingredients. They are truly delicious, creamy at the right point and with that crunchy chocolate touch that makes them irresistible. And the nice thing? They cost very little and are prepared in no time, without an ice cream maker.

I always keep them in the freezer, ready to turn any day into a special snack.

Ingredients

  • 2 cups heavy whipping cream
  • 1 tbsp vanilla powdered sugar
  • 7 oz condensed milk
  • to taste chocolate chips
  • 30 Digestive biscuits

Steps

  • In a large bowl, whip the cold cream together with the powdered sugar and condensed milk until you get a thick and frothy mixture.

  • Transfer the cream into a piping bag (optional, but very handy for dosing the amount precisely) and distribute it over a cookie. Close with another cookie, pressing lightly to form a sandwich.

  • With a small spatula, smooth the edges well for a neater result.

    Now let’s move on to the tasty details: we can sprinkle the sides with chocolate chips using a teaspoon or directly dip the cookies in a bowl full of chips, pressing gently to make them adhere well to the cream.

  • Place the ice cream sandwiches on a tray lined with parchment paper and put them in the freezer for at least 3 hours.
