LEMON CHICKEN SCALLOPS are a very tasty main dish. It is prepared in a few minutes and with very few ingredients. The meat stays very tender.
Served with a slice of lemon, they are also suitable when we have guests but don’t want to spend the evening at the stove, as the meat remains soft even if prepared in advance.
Alternatively to chicken, we can use pork loin or veal slices and for a more delicate taste, you can add a teaspoon of honey to the lemon juice.

Ingredients
- 1 chicken breast (sliced)
- 1 lemon
- Half cup water
- to taste salt
- to taste parsley
- to taste flour

Steps
Take a whole chicken breast, slice it thinly and flatten it with a meat tenderizer.
If you don’t have sharp enough knives or aren’t experienced, you can have your butcher prepare the slices for you.
Grate part of the lemon peel and set aside,
Cut the lemon in half and squeeze it.
Heat a large pan with a drizzle of extra virgin olive oil,
Once hot, place the scallops and cook for 5 minutes
Flip them and drizzle with the lemon juice,
Add salt and parsley and let it cook covered for about 5 minutes
Check the cooking and serve with the creamy sauce that has formed.
Decorate with slices and, if desired, with the grated lemon peel we set aside
