Ingredients
- 6 eggs
- 2.8 oz Parmesan cheese
- 1.8 oz sweet bacon
- 1 tbsp vegetable oil
- to taste salt
- to taste chopped parsley
- 7 oz canned lentils

Steps
Drain the lentils thoroughly and rinse them under running water.
In a large bowl, beat the eggs with a fork or a whisk.
Add the grated Parmesan, chopped parsley, a pinch of salt and mix well.In a non-stick pan, heat the tablespoon of vegetable oil and sauté the bacon until crispy. Add the lentils, stir, and let them flavor for a few minutes.
Pour the egg mixture into the pan with the lentils, level with a spoon, and cook over medium-low heat for about 6-7 minutes until the base of the omelette is golden and the mixture is set.
At this point, flip the omelette using a lid or a plate. I use a flip pan for this operation.
Continue cooking for a few more minutes, then transfer your New Year’s Eve Lentil Omelette to a serving plate or a round cutting board.
