If you love Oriental cuisine, you absolutely must try my revisited version of this fabulous dish. LIGHT CANTONESE RICE. It is prepared in no time and is also very popular with children. I used a rice cooker, but if you don’t have one available, any pot with a pierced glass lid will do. The important thing is not to touch the rice during cooking. Try it and let me know.

Ingredients
- 1 3/4 cups rice
- 1 1/2 cups water
- 1 cup frozen peas
- 4 eggs
- 5 oz cooked ham (diced)
- 1/4 cup dry white wine
- to taste soybean oil
- to taste salt

Steps
Take the rice and wash it very well in cold water until all starch residue is removed. After several rinses, the water should be clear.
Place it in the rice cooker, add the water, and stir. Turn on the appliance.
Once cooking is complete, it turns off automatically. Let it rest for 10 minutes.

Prepare the dressing and finish the preparation
While the rice is cooking, let’s focus on the dressing.
First, cook the frozen peas in a small pot with water for about 10-15 minutes and set aside
Take the wok, heat it on the stove, and pour in a generous amount of soybean oil.
When it is very hot, add the eggs and salt, and stir vigorously to scramble them.
Add the previously cooked peas and the diced ham, and mix well.
Mix in the rice, deglaze with the dry white wine, and let it evaporate.
Our light Cantonese rice is ready. Enjoy your dinner.
Storage and Tips
you can add soy sauce or Teriyaki sauce
serve in bowls or little bowls
for a tastier version, sauté the cooked ham before scrambling the eggs
If you like, you can dress it with a tablespoon of pasteurized mayonnaise
