Maltagliati with Potatoes and Bacon

Ingredients

  • 250 egg maltagliati
  • 4 potatoes
  • Half white onion
  • 1 carrot
  • 1 stalk celery
  • 2 l vegetable broth
  • 1 teaspoon tomato paste
  • 50 g sweet bacon
  • to taste salt
  • to taste black pepper
  • to taste oregano

Steps

  • Let’s prepare the vegetable broth. You can find my recipe HERE, or you can use broth cubes.

    Peel the potatoes and carrots and cut them into small cubes.
    Finely chop the onion and cut the celery into pieces.

    In a large pot, heat 2 tablespoons of extra virgin olive oil.
    Add the onion, carrot, and celery, and sauté for a few minutes. Add a teaspoon of tomato paste and mix well so that it completely dissolves.

    Add the bacon cut into cubes, oregano, and potatoes and let it flavor for 5 minutes, stirring occasionally.

  • Pour the hot vegetable broth until the potatoes are well covered and cook over medium heat with a lid for about 20 minutes, until the potatoes are soft.

    At this point, add the maltagliati directly into the pot with the potatoes and cook for the time indicated on the package (usually 5-7 minutes).
    If the liquid reduces too much, add a little more hot broth.
