Ingredients
- 4 eggs
- 1/2 cup sugar
- 1 1/4 cup all-purpose flour
- 3/4 cup potato starch
- 1/3 cup pumpkin (cooked)
- 1 cup unsweetened cocoa powder
- 1 packet baking powder
- 1/2 cup vegetable oil
- 1 cup sweetened non-dairy whipping cream

Steps
Cook the pumpkin and blend it until you get a puree.
Preheat the oven to 350°F and prepare a muffin tin with paper liners.
In a bowl, beat the eggs with the sugar. Add the oil and pumpkin puree and mix.
Combine the flour, potato starch, cocoa powder, and baking powder. Mix with an electric whisk until you get a smooth, homogeneous, and lump-free mixture.
Fill the liners with the batter about 2/3 full.
Bake in a static oven at 350°F for 25 minutes. Remove from oven and let cool.
Meanwhile, put a few drops of orange food coloring in the sweetened non-dairy whipping cream. Mix, and if the desired shade is achieved, whip the cream. Otherwise, add more coloring.
Fill a piping bag with the colored cream and decorate the cooled muffins.
