Ingredients

  • 4 eggs
  • 1/2 cup sugar
  • 1 1/4 cup all-purpose flour
  • 3/4 cup potato starch
  • 1/3 cup pumpkin (cooked)
  • 1 cup unsweetened cocoa powder
  • 1 packet baking powder
  • 1/2 cup vegetable oil
  • 1 cup sweetened non-dairy whipping cream
  • to taste food coloring (orange)

Steps

  • Cook the pumpkin and blend it until you get a puree.

  • Preheat the oven to 350°F and prepare a muffin tin with paper liners.

  • In a bowl, beat the eggs with the sugar. Add the oil and pumpkin puree and mix.

  • Combine the flour, potato starch, cocoa powder, and baking powder. Mix with an electric whisk until you get a smooth, homogeneous, and lump-free mixture.

  • Fill the liners with the batter about 2/3 full.

  • Bake in a static oven at 350°F for 25 minutes. Remove from oven and let cool.

  • Meanwhile, put a few drops of orange food coloring in the sweetened non-dairy whipping cream. Mix, and if the desired shade is achieved, whip the cream. Otherwise, add more coloring.

  • Fill a piping bag with the colored cream and decorate the cooled muffins.

  • Add some Halloween-themed sugar decorations and serve! Happy Halloween.

Storage and Tips …

Store in the fridge covered with a cake cover.
