The preparation is simple and quick: all the vegetables cook together in one pan, without the need for boiling or separate cooking. In a few minutes, you will have a colorful, fragrant, and flavorful dish on the table, ideal for any occasion.
This recipe is a great alternative to Parsley Potatoes, Pan-Fried Green Beans, Peas with Ham in a Pan but also Pan-Fried Carrot Sticks.

Ingredients
- 4 potatoes
- 3 carrots
- 3 zucchini
- 1 white onion
- 2 tablespoons extra virgin olive oil
- to taste salt
- to taste dried oregano

Steps
Wash and peel the potatoes and carrots, then cut them into similar-sized cubes to ensure even cooking times.
Peel the white onion and slice it thinly.
Wash the zucchini, remove the ends, and cut them into pieces.
In a large pan, heat the extra virgin olive oil.
Add the white onion and let it soften over low heat for 2-3 minutes.
Add the potatoes and carrots, mix well, and cook for about 8-10 minutes over medium heat, covering with a lid.
At this point, add the zucchini, season with salt and sprinkle with dried oregano.
Continue cooking for another 10 minutes, until all the vegetables are tender. If necessary, add a splash of water during cooking.
