Parsley Potatoes

Parsley potatoes are a delicious side dish and simple to prepare. This dish requires only a few ingredients but the result is rich in flavor and truly delightful.

Ingredients

  • 2.2 lbs potatoes
  • 3 tbsp extra virgin olive oil
  • 1 shallot
  • to taste salt
  • 1 bunch parsley

Steps

  • Start by boiling the potatoes in salted water until they become tender. Alternatively, you can use leftover boiled potatoes.

    Once cooked, let them cool, then peel them and roughly cut them into pieces.

  • In a non-stick pan, heat 3 tablespoons of extra virgin olive oil over medium heat.

    Add the chopped shallot and let it sauté until it becomes translucent.

  • Add the potatoes and chopped parsley, season with salt, and mix with a wooden spoon.

    Let them cook over medium-low heat for about 10 minutes to allow the potatoes to absorb the flavors of the shallot and oil.
