Paschal Savory Croissants

Ingredients

  • 1 sheet puff pastry (round)
  • 8 quail eggs
  • 5 oz spinach (fresh)
  • 2.8 oz ricotta
  • to taste salt
  • 1.8 oz Parmesan
  • 1 egg yolk
  • to taste poppy seeds

Steps

  • Let’s prepare the filling.

    Let’s focus on the quail eggs. Put them in a small pot with cold water and cook for 3/4 minutes from when it starts boiling.

    Remove them from the heat and cool them under cold water,

    Shell them gently and set aside.

  • Wash and dry the fresh spinach. Place them in a blender and chop finely.

    Add the fresh ricotta, salt, and Parmesan, and blend until you get a creamy mixture.

  • Let’s prepare the croissants

    Preheat the oven to 356 degrees Fahrenheit and line a baking tray with parchment paper.

  • Unroll the puff pastry and cut out 8 triangles with a knife.

  • Distribute a tablespoon of ricotta and spinach filling at the base of the triangles and add a boiled quail egg.

    Roll up each triangle starting from the base toward the narrower end, thus forming the croissants.

  • Place them on the lined baking tray, brush them with the beaten egg yolk, and sprinkle with poppy seeds.

    Bake for about 20 minutes until golden.

  • Our Paschal Savory Croissants are ready.

    Remove from the oven and let them cool slightly before serving.
