Ingredients

  • 14 oz broccoli (cleaned)
  • 7 oz potatoes (diced 3/4 inch)
  • 1 clove garlic
  • 8 cups vegetable broth
  • 2 tbsps extra virgin olive oil
  • to taste salt
  • to taste black pepper
  • 7 oz mixed pasta (for soups)

Steps

  • In a large pot, heat the extra virgin olive oil over medium heat. Add the garlic clove and sauté until golden and fragrant.

  • Add the diced potatoes and brown them for a few minutes.

  • Add the chopped broccoli and mix well with the potatoes.

  • Pour the vegetable broth to cover the vegetables well and bring to a boil, then reduce the heat and let it cook on medium-low heat, covered, until the potatoes and broccoli are tender (about 15-20 minutes).

  • In another pot, cook the pasta al dente. Drain it and add it to the pot with the broccoli and potatoes.

  • Adjust the salt and pepper, mix and finish cooking to blend all the ingredients. If the soup is too thick, you can add more vegetable broth.
