Pastina with Savoy Cabbage and Pumpkin Purée

When it starts to get cold outside, there’s nothing better than a warm soup like this pastina with Savoy cabbage and pumpkin purée.

It’s a comfort food genuine, perfect for a light dinner or to warm up the gloomiest days.
With few ingredients and in less than half an hour, we prepare a dish that feels like home, changing seasons, and little culinary indulgences.

Ideal even for the little ones, this creamy pastina with vegetables is a delicious way to enjoy a healthy first course, nutritious and irresistibly good.

Ingredients

  • 10.5 oz pumpkin
  • 8.8 oz Savoy cabbage
  • 1 potato
  • 1 tbsp extra virgin olive oil
  • 4.2 oz pastina
  • 2 cups vegetable broth
  • to taste salt
  • to taste grated Parmesan cheese (optional)

Steps

  • We start by washing and peeling the pumpkin and the potato, then cut them into pieces.
    We also clean the Savoy cabbage leaves, removing the tougher central part, and roughly chop them.

    Place all the vegetables in a pot and cover with about 2 cups of vegetable broth.
    Cover and let cook for about 25 minutes, until the vegetables are soft.

    At this point, blend everything with an immersion blender until you obtain a smooth and velvety cream.

    In a separate saucepan, bring some vegetable broth (or water) to a boil and cook the pastina. When it is almost ready, drain it slightly al dente and add it to the vegetable purée.

    Mix well, add a drizzle of extra virgin olive oil and, if desired, a tablespoon of grated Parmesan cheese to make it even creamier.

  • Our pastina with Savoy cabbage and pumpkin purée is ready. Serve hot, with a drizzle of raw olive oil and maybe some croutons for contrast.
