Peach Semifreddo

The PEACH SEMIFREDDO is a fresh and irresistible dessert, perfect for cooling down summer days.

This delicious preparation combines the sweetness of ripe peaches with the lightness of cream and peach yogurt.

The preparation of this semifreddo is simple and requires few ingredients, but the final result is visually and tastefully impressive.

It can be served as a dessert after a summer meal or as a pleasant snack to enjoy with company.

Ingredients

  • 2 cups cups sweetened plant-based whipping cream
  • 2 cups cups yogurt (peach-flavored)
  • 2 sheets gelatin
  • 4 peaches
  • 1 sheet gelatin (for peach sauce)
  • 1 espresso cup milk
  • 4 tablespoons sugar

Tools

  • Springform pan 6.5/7 inches
  • Electric beaters
  • Knife
  • Cutting board

Steps

  • PREPARE THE BASE

    Start by soaking 2 sheets of gelatin in cold water.

  • Whip the sweetened plant-based cream with beaters or a stand mixer.

  • Add the peach yogurt and blend gently

    whipped cream + yogurt
  • Wring out the gelatin and dissolve it in a small cup of warm milk

  • Combine the mixture with the whipped cream and yogurt and mix

  • Pour the mixture into a ring mold and refrigerate.

  • PREPARE THE PEACH TOPPING

    Soak the sheet of gelatin in cold water.

    Peel the peaches, cut them into cubes, and cook them in a small pot with sugar for about 15 minutes, then roughly blend them with an immersion blender.

  • Add the squeezed gelatin and stir vigorously.

  • FINISH THE PREPARATION

    Let the sauce cool for about 10 minutes, then pour it over the cream and yogurt base.

  • Refrigerate and let set for at least 4 hours.

  • Our peach semifreddo is ready.

    Decorate with peach slices before serving.

Storage and Tips …

Store in the fridge in an airtight container.

Consume within 2 days

You can replace peaches with apricots.
