Just a few ingredients are enough to serve a complete dish, perfect for lunch or dinner any day. The sausage adds flavor, the zucchini adds lightness, and the result is a perfect balance that everyone loves, even kids!

Ingredients

  • 12 oz rigatoni penne
  • 10.5 oz sausage
  • 1 zucchini
  • Half white onion
  • 2 tbsp extra virgin olive oil
  • 2.8 oz cream cheese
  • to taste salt
  • to taste dried parsley

Steps

  • Wash the zucchini and cut it into cubes.

    Peel the white onion and finely chop it.

    Remove the casing from the sausage and crumble it with a fork.

  • In a large pan, heat a drizzle of extra virgin olive oil and sauté the onion until golden.

    Add the sausage and let it brown for a few minutes. Add the zucchini and cook over medium heat until they are soft, seasoning with salt.

    Meanwhile, cook the penne in plenty of salted water, following the cooking times on the package.

    Drain them and toss them into the pan with the sauce, being sure to set aside a ladle of cooking water.

  • Sauté everything for a couple of minutes, then add the cream cheese and mix well until you get a creamy consistency. If necessary, add a little cooking water to make the sauce more enveloping.

    Our Penne with Sausage and Zucchini are ready. Serve and top with a sprinkle of dried parsley.
