Puff Pastry Ring Cake with Pears and Gorgonzola

Puff pastry ring cake with pears and gorgonzola. An original and refined appetizer, perfect for those who love combining the sweet taste of fruit with the strong flavor of cheese.

This recipe is ideal to serve as a main dish or for a buffet, it is simple to prepare thanks to the use of ready-made puff pastry. The final touch with honey gives a slight sweetness that will make this ring cake irresistible.

Follow the steps carefully, but if you want to experiment, use 2 rolls of puff pastry. You will get a fluffier and softer ring cake.

Ingredients

  • 1 roll puff pastry (rectangular)
  • 1 Coscia pear
  • 8.8 oz gorgonzola and mascarpone
  • 2 tablespoons brown sugar
  • 1 egg
  • 3.5 oz walnuts
  • to taste salt
  • to taste black pepper
  • 1 tablespoon honey
  • to taste black sesame seeds (or poppy seeds)

Tools

  • Baking tray
  • Pan
  • Chopping board
  • Knife

Steps

  • First, peel the pears, remove the core and seeds, and cut them into small cubes.

    Put them in a pan with the brown sugar, stir and cook for about 5 minutes, until they become soft but still crunchy inside.

    Once cooked, let them cool.

  • Preheat the oven to 365°F and unroll the puff pastry directly on the baking tray.

    With the help of a knife, cut fringes along one of the long sides. (see photo).

    Distribute the now cold caramelized pears along the opposite side. Add the gorgonzola and mascarpone, some walnut kernels, salt, and black pepper.

  • At this point, roll the puff pastry onto itself. For a more scenic effect, you can either roll or cross the fringes.

    Join the ends to form the classic ring shape, brush the surface with beaten egg, and decorate with black sesame seeds and walnuts.

    Bake and cook for about 20/25 minutes until golden.
