Puff Pastry Tree with Pesto and Ricotta. I give you the recipe to prepare this wonderful Christmas savory pie.
This recipe can be prepared the day before and served as an appetizer or even as an aperitif.
The particular Christmas tree shape makes this dish very scenic despite being an economical and quick dish to prepare.
you can replace the puff pastry with shortcrust pastry and substitute Genoese pesto with zucchini pesto or green bean pesto.

Ingredients
- 2 rolls puff pastry
- 150 g ricotta
- 100 g pesto
- 1 egg yolk
- 5 cherry tomatoes
- to taste black sesame seeds

Steps
Preheat the oven to 350°F (180°C). Wash the cherry tomatoes and cut them in half.
In a bowl, mix the ricotta with the pesto until you get a homogeneous mixture.
Unroll the two rolls of puff pastry, overlap them, and with a knife carve the shape of a tree, as shown in the picture.
Spread the first pastry on a baking tray lined with parchment paper and distribute the pesto and ricotta mixture, taking care to leave at least half an inch (1 cm) of free edge.
Overlap the second roll and cut the branches that will be rolled up on themselves.
With the leftover puff pastry, cut out stars to decorate our tree.
Brush the entire surface with beaten egg yolk and distribute the cherry tomatoes on the branches.
Sprinkle with black sesame seeds and bake.
Bake for about 20/25 minutes until golden.
