Ingredients
- 1.75 lbs butternut squash
- 3.5 oz cooked ham
- 3.5 oz pizza mozzarella (shredded)
- 1 mozzarella
- 2.8 oz grated Parmesan cheese
- as needed flour
- 1 tbsp extra virgin olive oil

Steps
Preheat the oven to 375 degrees Fahrenheit.
Start by peeling the butternut squash and slicing it into pieces about a quarter inch thick.
Coat the pumpkin slices in flour, ensuring they are evenly covered.
Take a glass baking dish, grease it with a tablespoon of extra virgin olive oil and arrange a layer of pumpkin slices.
Add slices of cooked ham and shredded pizza mozzarella.
Sprinkle with grated Parmesan cheese and form two more layers.
Finish with the last layer of pumpkin, mozzarella, Parmesan, and add the traditional mozzarella cut into pieces.
Bake for about 40 minutes until the pumpkin is tender. To check, pierce it with a toothpick.
If necessary, brown the surface for an additional 5 minutes with the oven on grill mode.
Once ready, remove the pumpkin parmesan from the oven and let it rest for 15 minutes before serving.
Storage and Tips
Store in the fridge covered with aluminum foil.
Consume within 2 days
I strongly advise against freezing this dish because the pumpkin would release too much water during thawing.

Sure. Just remove the skin and seeds and create a layer with the pumpkin of your choice.
