Ingredients

  • 2.2 lbs pumpkin (peeled and diced)
  • 1 onion
  • 2 potatoes
  • 1 carrot
  • 4.2 cups vegetable broth
  • 2 tbsps extra virgin olive oil
  • 2 tbsps cooking cream (optional)
  • to taste salt
  • to taste pepper
  • 1/4 white onion

Steps

  • In a large pot, heat the extra virgin olive oil over medium heat. Add the onion and sauté until it becomes translucent.

  • Add the pumpkin, potatoes, and carrots, all diced.

    Mix well and cook for about 5-7 minutes.

  • Add the vegetable broth and bring to a boil, then lower the heat and let it cook on medium-low for about 25-30 minutes or until the vegetables are soft

  • Once the vegetables are cooked, blend everything with an immersion blender until you obtain a smooth and velvety consistency.

  • Adjust with salt and pepper and serve the pumpkin velouté hot, garnished with fresh parsley.

    If desired, add a tablespoon of fresh cream.

Storage and Tips …

Store in the fridge in an airtight container.
