Ingredients
- 21 oz canned chickpeas
- 1 carrot
- 1 stalk celery
- 1/4 white onion
- 1 tsp tomato paste
- 2 tbsp extra virgin olive oil
- 1 broth cube (vegetable)
- 1 bunch parsley
- to taste black pepper
- to taste water
Steps
Wash the celery and peel the carrot. Cut them into pieces and chop them with a chopper.
In a large pot, heat the extra virgin olive oil over medium heat. Add the chopped onion and let it soften.
Add the chopped carrot and celery and cook for 3-4 minutes.
Add the chickpeas and tomato paste, stir and let it season for 5 minutes.
Pour in enough water to cover the ingredients, add the vegetable broth cube, stir and bring to a boil.
Lower the heat and let it simmer for about 15-20 minutes.
Taste and, if necessary, adjust the salt and pepper.
Our quick chickpea soup is ready. Serve it in individual bowls garnished with a sprig of fresh parsley and accompanied by slices of toasted or fresh bread.
