Ingredients
- 0.88 lbs beef (thinly sliced)
- 1.75 oz arugula
- 3.5 oz Parmigiano Reggiano DOP (shaved)
- 4 tbsps extra virgin olive oil
- 2 lemons

Steps
First, we need to have our butcher cut the beef slices very thin. If desired, we can do it ourselves with a very sharp knife. To make cutting easier, it is necessary to put the meat in the freezer for about 15-20 minutes before slicing it.
Place the meat slices on a large plate, a tray, or on 4 serving plates. Season with lemon juice, extra virgin olive oil, salt, and pepper. Cover with plastic wrap and put in the fridge to rest for 20 minutes.
In the meantime, wash and dry the arugula. Take the meat from the fridge, distribute the arugula pieces, and the shaved Parmesan.
