  • 0.88 lbs beef (thinly sliced)
  • 1.75 oz arugula
  • 3.5 oz Parmigiano Reggiano DOP (shaved)
  • 4 tbsps extra virgin olive oil
  • 2 lemons

Steps

  • First, we need to have our butcher cut the beef slices very thin. If desired, we can do it ourselves with a very sharp knife. To make cutting easier, it is necessary to put the meat in the freezer for about 15-20 minutes before slicing it.

  • Place the meat slices on a large plate, a tray, or on 4 serving plates. Season with lemon juice, extra virgin olive oil, salt, and pepper. Cover with plastic wrap and put in the fridge to rest for 20 minutes.

  • In the meantime, wash and dry the arugula. Take the meat from the fridge, distribute the arugula pieces, and the shaved Parmesan.
