Ingredients
- 2.2 lbs red onions from Tropea
- 2.5 cups sugar
- 0.2 cups Cognac
- 1 pinch salt
- 0.4 cups vinegar

Steps
Peel the Tropea onions, slice them thinly, and place them in a bowl.
Add a pinch of salt, the Cognac, vinegar, sugar, and mix well.
Cover with plastic wrap and let marinate for at least 3 hours.
After this time, place the onions in a pot and cook over medium heat for about 40 minutes until they have thickened.
Once the desired consistency is reached, transfer the onion jam into previously sterilized jars, seal them and turn them upside down.
Let them rest for at least two hours, and then our jam will be ready to enjoy.
Storage and tips
