The RICE AND BACON PIE is a tasty one-dish meal, perfect to take to the office or for a picnic.
It is prepared in no time, with few ingredients. You just need to have some leftover boiled rice and you’re done.
I used bacon, but you can easily replace it with cooked ham, mortadella, or any other cold cuts you have available.
For a more indulgent version, add some diced provola cheese, and your slices will be “stringy”.

Ingredients
- 1 1/2 cups rice (boiled)
- 4 eggs
- 3/4 cup grated Parmesan cheese
- to taste dried parsley
- to taste salt
- 2.8 oz bacon
- to taste extra virgin olive oil

Steps
Boil the rice and set it aside in a ceramic bowl. If you have leftover rice, use that.
Take a glass bowl and break the eggs into it, add the grated Parmesan, parsley, salt, and whisk vigorously until all ingredients are mixed.
Pour the obtained mixture into the bowl containing the boiled rice and mix.
Add the diced bacon and combine everything.
Heat a pan with a little olive oil.
Pour the mixture, level it with a spoon, and cook on low heat for about 10 minutes
With the help of a plate or a lid, flip the rice pie and continue cooking for another 10 minutes.
