Ingredients
- 14 oz frozen peas
- Half a white onion
- 1 bouillon cube (vegetable)
- 1 1/2 cups rice
- 2 tbsps olive oil
- 4 1/4 cups water
Steps
In a large pot, heat some olive oil over medium heat. Add the finely sliced onion and sauté until it becomes translucent.
Add the frozen peas and continue cooking for a few minutes. Cover with water and add the bouillon cube. Bring everything to a boil and then lower the heat.
Add the rice and continue cooking, making sure to stir occasionally to prevent the rice from sticking to the bottom of the pot. If necessary, add more water.
Cook until the rice is cooked and the peas are tender.
Adjust the salt and serve the soup hot, perhaps garnishing it with a drizzle of extra virgin olive oil.
