Ingredients

  • 1 lb Mantovana pumpkin (cleaned)
  • 2 potatoes (medium)
  • 1 cup rice
  • 1 shallot
  • 1 broth cube (vegetable)
  • 3 tbsp extra virgin olive oil
  • to taste salt
  • to taste black pepper
  • 6 cups warm water

Steps

  • Cut the pumpkin into small cubes, removing the skin and seeds. Make sure you have about 1 lb of pumpkin cubes.

  • Peel and finely slice the shallot.

    Peel the potatoes and cut them into cubes.

  • In a large pot, heat the extra virgin olive oil over medium heat then sauté the shallot.

  • Add the pumpkin and potatoes and sauté for a few minutes, stirring.

  • Add the broth cube, cover the vegetables with warm water, and mix with a wooden spoon.

  • Cook covered for about 15/20 minutes.

  • At this point, add the rice and bring to a boil.

  • Let the soup cook over medium-low heat, stirring occasionally, until the rice is cooked and the pumpkin is soft. If necessary, add more water.

  • Serve the rice and pumpkin soup in individual bowls, garnishing with freshly chopped parsley and grated Parmesan (if desired).
