Ingredients
- 1 1/2 cups Arborio rice
- 2 cups peas (frozen)
- 4 1/4 cups vegetable broth
- 11 oz tuna in oil
- 1/4 white onion
- 3 tbsps extra virgin olive oil
- to taste salt

Steps
In a pot, heat the extra virgin olive oil and sauté the chopped onion for 2-3 minutes over low heat.
Add the rice and toast for 2 minutes, stirring often.
Add the frozen peas and cover with the vegetable broth. Cook the rice over medium heat for about 15-18 minutes, stirring occasionally and adding more hot broth if necessary. The rice should be soft and the peas well-cooked.
At the end of cooking, add the drained and flaked tuna. Stir well to flavor.
