Ingredients
- 28 oz canned cannellini beans (2 cans)
- 1 1/2 cups rice
- 1 clove garlic
- Half white onion
- 2 tbsp extra virgin olive oil
- to taste vegetable broth

Steps
First, drain and rinse the canned cannellini beans under running water.
In a large pot, heat the extra virgin olive oil over medium heat. Add the garlic clove and chopped onion and cook until the onion turns translucent.
Add the cannellini beans and mix well.
Pour the rice into the pot with the beans and mix with a wooden spoon so that the rice absorbs the other ingredients well.
Add vegetable broth to the pot until beans and rice are completely covered.
Adjust the amount of broth according to the desired consistency of the soup.
Bring to a boil, then reduce the heat and let it simmer until the rice is cooked and the soup has reached a creamy consistency.
