Ricotta and Chocolate Bundt Cake

For a delightful breakfast or snack, the ricotta and chocolate bundt cake is always a sure bet: soft, fragrant, and with that delicious touch that immediately lifts the mood.

It’s one of those clever recipes that you can whip up in a few minutes and win everyone over, young and old. I made it with the Bimby for convenience, but simple electric whisks are enough to achieve the same perfect result.

Ingredients

  • 3 eggs
  • 5/8 cup sugar
  • 1 cup ricotta
  • 3/4 cup cornstarch (maizena)
  • 1 1/4 cup flour
  • 1 packet baking powder
  • 3/4 cup milk chocolate
  • 1/3 cup vegetable oil
  • to taste butter (to grease the mold)
  • to taste powdered sugar

Tools

  • Bundt cake mold
  • Electric whisks
  • Chopper

Steps

  • Preheat the oven to 350 degrees Fahrenheit.

    Coarsely chop the chocolate with the Bimby or a chopper and set aside.

    Break the eggs into the bowl, add the sugar and whisk for 3 minutes at speed 4. (with butterfly inserted)

    Pour in the oil and ricotta and mix for 1 minute at speed 4.

    Add the baking powder, sifted flour and cornstarch and mix everything for 1 minute at speed 4.

    Add the previously chopped chocolate and mix for 30 seconds at speed 4 with counter-clockwise activated.

    Butter and flour a bundt cake mold and pour the obtained batter into it.

    Bake and cook for 30 minutes, then remove from oven (do the toothpick test first) and let cool.

    Once cooled, gently unmold and place the bundt cake on a cake plate.

    Decorate with powdered sugar and serve with a cappuccino or fruit juice.

Storage and Tips …

Store covered with a cake cover

Instead of the Bimby, you can use simple electric whisks.

Consume within 2/3 days

For a more indulgent version, decorate the plate with chocolate topping at serving time

You can replace milk chocolate with dark or white chocolate.
