Ricotta and Coffee Cake

Ingredients

  • 17.5 oz ricotta
  • 2 cups coffee (small cups)
  • 2 tbsps potato starch
  • 1 egg
  • 0.5 cup sugar
  • 2 tbsps unsweetened cocoa powder
  • to taste whipped cream (sweetened)
  • to taste powdered sugar

  • Baking Pan 8 inches

  • Bowl

Steps

  • Preheat the oven to 340°F and butter an 8-inch baking pan.

    You can also use a non-stick spray or a handy disposable pan.

    Prepare the coffee and let it cool or better yet, refrigerate.

  • In a large bowl, put the egg, ricotta, sugar, cocoa, potato starch, and coffee.

    Mix everything with the electric beaters until you get a smooth and homogeneous mixture.

    To perform this operation, you can also put all the ingredients in a blender and blend.

  • Pour the obtained mixture into the pan, bake and cook for about 25/30 minutes or until the cake is golden brown and a toothpick inserted in the center comes out clean.

  • Remove from oven and let cool completely.

    Decorate your cake with dollops of whipped cream, powdered sugar, and chocolate coffee beans!
