Ingredients
- 4 eggs
- 3/4 cup sugar
- 1 1/2 cup flour
- 1 cup ricotta
- 4 pears
- 1 packet baking powder
- as needed powdered sugar (for decoration)
- as needed lemon juice
- as needed butter (for the pan)

Steps
Preheat the oven to 350°F.
Wash 3 pears under running water, dry them, peel them, remove the core and seeds, and set aside in a bowl with water and lemon juice.
In a large bowl, beat the eggs with the sugar until a frothy mixture is obtained. To perform this operation, I recommend using an electric whisk.
Add the flour sifted little by little and the packet of baking powder and continue mixing for at least 1 minute.
Add the ricotta and mix for 1 minute.
Add the pears and mix them into the batter.
Butter and flour a 9-inch springform pan or use a cake release spray.
Pour the batter into the pan and decorate with pear slices set aside, arranged in a wheel. Sprinkle with granulated sugar and bake for 40 minutes at 350°F in fan mode.
Perform a toothpick test, remove from the oven and let cool before unmolding and plating.
Before serving, decorate with a sprinkle of powdered sugar.
