Ricotta Donuts. Today I reveal the secret to preparing soft and delicate sweets, perfect for breakfast but also for a snack.
Thanks to ricotta, these donuts are soft and moist, with a light and irresistible texture. This recipe is simple and quick to make, with a few genuine ingredients that together create an irresistible result. Ideal to enjoy with a cup of tea or coffee, but also with a fruit juice or hot chocolate.
With these quantities, you will get 12 donuts, but I recommend preparing double because they will disappear quickly.

Ingredients
- 1 2/3 cups all-purpose flour
- 3/4 cup sugar
- to taste lemon zest (grated)
- 2 eggs
- 3/4 cup ricotta
- Half packet baking powder
- to taste powdered sugar (optional)

Steps
Preheat the oven to 350°F.
In a large bowl, beat the eggs with the sugar until frothy. To perform this operation, I recommend using an electric whisk.
Add the ricotta and mix until you get a smooth cream.
Add the sifted flour, baking powder and grated lemon zest and continue to mix with the whisk until you get a smooth and homogeneous dough.
Grease a silicone donut mold. In this case, I recommend using a baking spray. Pour the dough into the molds considering that there will be about 12 pieces.
Bake and cook for 18 minutes. Remove from oven and let cool.
Once cooled, remove the donuts from the molds, place them on a tray and sprinkle with plenty of powdered sugar.
