Roast Chicken Stuffed with Pumpkin and Potatoes

Today, October 2nd, we celebrate Roast Chicken Day and I couldn’t pass up the chance to fire up the oven and bring something special to the table.

Instead of the classic roast chicken, I decided to prepare a different and super tasty version: roast chicken stuffed with pumpkin and potatoes. An autumn recipe, simple but rich in flavor, perfect to share with family on Sundays or when you want to indulge yourself with a dish that smells like home.

The sweetness of the pumpkin and the creaminess of the potatoes perfectly complement the spices and make this chicken truly irresistible.

Ingredients

  • 1 chicken (whole, 2.2 lbs)
  • 1 1/2 cups butternut squash
  • 1 1/2 cups potatoes
  • 1/2 cup breadcrumbs
  • 2 oz provolone cheese (grated)
  • 1 tbsp sweet paprika
  • to taste extra virgin olive oil
  • to taste black pepper
  • to taste roast seasonings
  • to taste dried parsley
  • 1/4 glass vegetable broth (or hot water)

Tools

Steps

  • Boil the pumpkin and the potatoes cut into small cubes, just until they soften.

    Transfer everything to a bowl and season with breadcrumbs, grated provolone, paprika, black pepper, salt, and a drizzle of extra virgin olive oil.

    Mix well until obtaining a tasty mixture.

  • Fill the chicken with the stuffing prepared.

    Close the opening of the chicken with 2 toothpicks, so the stuffing doesn’t come out.

    Place the chicken in a baking tray lined with parchment paper and season it with oil, salt, parsley, roast seasonings, and rosemary.
    Bake at 350°F for about 1 hour.
    Halfway through cooking, baste the chicken with a ladle of vegetable broth, so it remains tender and juicy.
