Roast Chicken Stuffed with Pumpkin and Potatoes

Today, October 2nd, we celebrate Roast Chicken Day and I couldn’t miss the opportunity to turn on the oven and bring something special to the table.

Instead of the classic roast chicken, I wanted to prepare a different and super tasty version: roast chicken stuffed with pumpkin and potatoes. A simple yet flavorful autumn recipe, perfect to share with family on Sundays or when you feel like pampering yourself with a dish that smells like home.

The sweetness of the pumpkin and the creaminess of the potatoes blend perfectly with the spices, making this chicken truly irresistible.

Ingredients

  • 1 whole chicken (about 2.2 lbs)
  • 1 1/3 cups butternut squash
  • 1 1/3 cups potatoes
  • 1/2 cup breadcrumbs
  • 2 oz provola cheese (grated)
  • 1 tbsp sweet paprika
  • to taste extra virgin olive oil
  • to taste black pepper
  • to taste seasoning for roast
  • to taste dried parsley
  • 1/2 glass vegetable broth (or hot water)

Steps

  • Boil the pumpkin and potatoes cut into small cubes, just enough to soften them.

    Transfer everything into a bowl and season with breadcrumbs, grated provola, paprika, black pepper, salt, and a drizzle of extra virgin olive oil.

    Mix well until you get a flavorful mixture.

  • Stuff the chicken with the prepared stuffing.

    Close the chicken opening with 2 toothpicks, so the stuffing doesn’t come out.

    Place the chicken in a baking dish lined with parchment paper and season it with oil, salt, parsley, seasoning for roast, and rosemary.
    Bake at 356°F for about 1 hour.
    Halfway through cooking, baste the chicken with a ladle of vegetable broth to keep it soft and juicy.
