Ingredients
- 1/2 cup heavy cream
- 3.2 oz butter
- 3.5 oz sugar
- 1 teaspoon fine salt (level)

Steps
In a heavy-bottomed pot, melt the sugar over medium heat. Stir occasionally with a wooden spoon or heat-resistant silicone spatula. It’s even better if you swirl the pot. The sugar will start to caramelize and turn golden.
Add the cubed butter and stir quickly. The mixture will start to bubble, but this is normal.
At this point, remove the pot from the heat, add the salt and slowly pour in the cream, stirring continuously. Again, be cautious as the caramel may bubble.
Once a smooth cream is obtained, pour the SALTED CARAMEL into a previously sterilized airtight jar.
Allow it to cool to room temperature, then transfer to the fridge for at least 12 hours.
At this point, our SALTED CARAMEL will be dense and ready to use for filling cheesecake, ice creams, panna cotta or other desserts.
