Ingredients

  • 14 oz sausage
  • 4 potatoes (medium)
  • 2 fennel
  • Half white onion
  • Half cup white wine
  • 3 tbsp extra virgin olive oil
  • to taste salt
  • to taste black pepper

Steps

  • Peel the potatoes and cut them into cubes. Remove the outer leaves of the fennel, wash them and cut them into pieces. Slice the onion.

    Place all the vegetables in a large bowl, add the sausage cut into pieces, and season with salt, pepper, and two tablespoons of extra virgin olive oil.

    Mix with a wooden spoon and set aside for 10 minutes to let all the ingredients absorb the flavors.

  • In a large pan, heat a tablespoon of extra virgin olive oil. Add the sausage with the fennel and the potatoes and let them absorb the flavors for a few minutes.

    Lower the heat, cover with a lid, and let cook for about 25-30 minutes.
    Stir occasionally and, if necessary, add a splash of water to prevent sticking.

    Add the white wine and let the alcohol evaporate over high heat for a couple of minutes.
