Ingredients
- 10 oz broccoli florets
- 1 egg
- 2 tbsp all-purpose flour
- 3 oz grated Parmesan cheese
- to taste salt
- to taste black pepper
- 3.5 oz feta cheese
- A few sprays extra virgin olive oil
- to taste breadcrumbs

Steps
Cut the broccoli into florets, wash them under running water and boil them in salted water for about 7-8 minutes until tender. Drain and let them cool.
In a bowl, mash the broccoli coarsely with a fork or a potato masher.
Add the egg, the grated Parmesan, the flour, a pinch of salt and freshly ground black pepper.
Mix everything until homogeneous. If the mixture is too soft, add a little more flour; if too dry, add a tablespoon of water.
Lightly grease 4 individual molds with extra virgin olive oil and sprinkle them with breadcrumbs to prevent the cakes from sticking. For convenience, I use a non-stick spray.
Distribute half of the mixture into the molds, leveling the surface.
Add a bit of crumbled feta to the center of each cake to create a flavorful heart.
Cover with the remaining mixture, leveling the surface again. Sprinkle with breadcrumbs and spray a little extra virgin olive oil.
Cook the cakes in an air fryer at 340°F for 12-15 minutes until they are golden and firm.
