Savory Carbonara Tart

The savory carbonara tart is a tasty variation of the famous carbonara pasta.

Ingredients

  • 2 rolls puff pastry
  • 7 oz guanciale (or smoked bacon)
  • 3 potatoes
  • 3 eggs
  • 5 oz cooking cream
  • 3.5 oz pecorino cheese
  • 1 egg yolk (to brush on the surface)
  • to taste salt
  • to taste poppy seeds

Steps

  • Let’s start by peeling the potatoes and slicing them.

    Cook them for about 5 minutes in a pot with boiling water. They should just soften. Drain them and set aside.

    In a bowl, put the eggs, black pepper, salt, pecorino cheese, and beat vigorously. Add the cream and mix until you get a smooth and homogeneous mixture.

  • Preheat the oven to 350°F.

    Unroll both sheets of puff pastry.

    Place the first one in a baking tray and prick the base with a fork.

    Cut the second one into strips about 0.4 inches wide.

  • Distribute the potatoes on the pastry base, add the diced guanciale, and cover everything with the egg mixture.

    Lay the pastry strips over the tart surface and brush with the beaten egg yolk.

    Sprinkle poppy seeds and bake.

  • Bake for about 25/30 minutes until golden brown.

    Remove from the oven and let cool slightly before serving.
