The savory carbonara tart is a tasty variation of the very famous carbonara pasta.
This savory pie is perfect to serve as a main course, but also as an appetizer or to enhance a cocktail party.

Ingredients
- 2 rolls puff pastry
- 7 oz guanciale (or smoked bacon)
- 3 potatoes
- 3 eggs
- 5 oz cooking cream
- 3.5 oz pecorino cheese
- 1 egg yolk (to brush the surface)
- to taste salt
- to taste poppy seeds

Steps
Begin by peeling the potatoes and slicing them.
Cook them for about 5 minutes in a pot with boiling water. They should just soften. Drain and set aside.
In a bowl, place the eggs, black pepper, salt, pecorino cheese, and beat vigorously. Add the cream and mix until you get a smooth and homogeneous mixture.
Preheat the oven to 350 degrees Fahrenheit.
Unroll both sheets of puff pastry.
Place the first sheet in a baking tray and prick the base with a fork.
Cut the second sheet into 1-inch strips.
Spread the potatoes over the puff pastry base, add the diced guanciale, and cover everything with the egg mixture.
Arrange the puff pastry strips on the surface of the tart and brush with the beaten egg yolk.
Sprinkle with poppy seeds and bake.
Bake for about 25/30 minutes until golden brown.
Remove from oven and let cool slightly before serving.
