Easy and quick to make, these small savory delights are perfect for surprising guests with a simple yet impressive recipe.
These little bites, with their typical shell shape, turn into a savory version thanks to the addition of ingredients like olives, cooked ham, and mozzarella.
You can enjoy them either hot or cold. I prefer to warm them up for a few minutes in an air fryer.

Ingredients
- 5.64 oz all-purpose flour
- 1 tbsp vegetable oil
- 1 packet instant yeast for savory preparations
- 2.82 oz mozzarella for pizza (shredded)
- 3.53 oz cooked ham (diced)
- 5.29 oz pitted olives
- 4 eggs
- 2 tsp whole milk
- Half tsp salt

Steps
Preheat the oven to 356°F.
In a large bowl, beat the eggs with the milk and vegetable oil until you get a homogeneous mixture.
Add the yeast, salt, and the sifted flour, gradually. For this step, I recommend using electric whisks.
Once you have a smooth and lump-free dough, add the grated mozzarella, the diced cooked ham, and the olives sliced into rounds. Gently mix with a spatula to evenly distribute the ingredients.
Pour the mixture into madeleine silicone molds, being careful to fill them about 3/4 of their capacity.
Bake and cook for 15/20 minutes, or until the madeleines are puffed up and golden on the surface. You can also perform the toothpick test: if it comes out clean, they are ready.

Remove from the oven and let cool. Enjoy!
