Savory Mini Cheesecakes

Savory mini cheesecakes are delicious cold savory tarts that are easy to prepare and require no baking. Perfect to accompany appetizers, if served together with savory chantilly and savory profiteroles you will also achieve a super scenic effect.

Ingredients

  • 8.8 oz taralli
  • 4.6 oz butter
  • 4.4 oz cream cheese
  • 4.4 oz ricotta
  • 3.5 oz mortadella with pistachios
  • 2 sheets gelatin
  • 1 coffee cup milk
  • cherry tomatoes
  • walnut halves
  • cubed cooked ham
  • black olives
  • chopped pistachios

Tools

For convenience, I used the Thermomix but a simple food processor will achieve the same result

Steps

  • First, take the taralli and chop them for 1 minute at speed 8

    Then melt the butter in the microwave or on the stove in a small pan, add it to the powdered taralli and mix for 1 minute at speed 5

  • Line silicone molds with plastic wrap and form a layer about a quarter-inch thick with the butter and taralli mixture.

    Compact well with the help of a spoon and place in the freezer for about 15 minutes

  • Meanwhile, take the gelatin sheets, cut them in half and soak them in cold water

  • Put the mortadella in the bowl and chop for 1 minute at speed 6

    Add the cream cheese and the ricotta and mix well for 2 minutes at speed 5

  • Add the previously squeezed and dissolved gelatin in a small cup of hot milk.

  • Mix everything for 2 minutes at speed 4

  • Our cream is ready.

    Take the taralli bases out of the freezer, which will have solidified by now, and pour the obtained mixture inside

  • Level well with the back of a spoon and refrigerate for about 1 hour.

    Once the resting time has elapsed, you can take the tarts out of the fridge and unmold them.

    Place them on a serving plate and get creative with the decoration!!!

    I garnished them with mortadella and pistachios, diced ham, walnuts, olives, and cherry tomatoes …

Store in the fridge until ready to serve

Consume within 3 days

You can substitute mortadella with cooked ham or smoked salmon
