Ingredients

  • 2 tbsp coarse salt
  • 2 sprigs rosemary
  • 2 tbsp milk
  • 7 tbsp butter (cold and diced)
  • 1 egg
  • 1.75 cups all-purpose flour
  • 3 tbsp grated Parmesan cheese
  • to taste extra virgin olive oil

Tools

  • Blender
  • Cookie cutters cookie cutter
  • Plastic wrap
  • Baking sheet
  • Parchment paper
  • Brush
  • Rolling pin

Steps

  • Place the flour, grated Parmesan, milk, egg, and cold diced butter into the blender and blend for about 30/40 seconds.

  • Transfer the obtained dough onto a work surface and compact it with your hands until you get a smooth and homogeneous ball.

  • Wrap it in plastic wrap and place it in the fridge to rest for about 30 minutes.

  • Meanwhile, chop the salt together with the rosemary needles and set aside.

  • Preheat the oven to 375°F and flour the work surface.

  • Take the dough from the fridge and with the help of a rolling pin, roll it out to about 0.75 inches thick.

  • Use a cookie cutter to cut out shapes and place them on a baking sheet previously lined with parchment paper.

  • Brush all the cookies with extra virgin olive oil and sprinkle them with the rosemary-flavored salt.

  • Bake and cook for about 10/12 minutes.

  • Remove from the oven and let our savory rosemary cookies cool before arranging them on a slate plate.
